Sweet or Savory Homemade Mini Waffles Recipe

Everything is more cute when its mini, even waffles! This homemade mini waffle recipe is a staple in our home for a slow Saturday, and is the perfect base for any additions, sweet or savory! They are made with Greek yogurt to add that tangy dairy flavor, and then the usual suspects: flour, milk, a little sugar and salt, baking powder and soda, and an egg. For savory waffles, I like to toss in shredded cheddar cheese and potato, with cooked bacon and sliced green onions. For sweet ones, I think its hard to beat a classic chocolate chip. But blueberry waffles is also a fantastic choice.

Things you should know before making waffles:

First, if you have a waffle iron, its probably rare that you have a mini one. Another thing- if your making waffles, you’re probably making them for a crowd. The recipe, as written, is the perfect amount of batter to feed 2 adults. It makes about 8 mini waffles, or 4 regular-sized. If you have more folks to feed, double the recipe!

This is the waffle maker I have. It’s probably time for an upgrade, but not because its going out- it’s because I like making a lot of waffles at once. But for just my husband and I, this maker is perfect:

When making waffles or pancakes or other delicious baked breakfast items, cultured dairy products bring a ton of flavor! Because I normally always have Greek yogurt on hand, that’s what I use in this recipe. But I think replacing it with sour cream would be delightful. Even better, replace the milk and yogurt with buttermilk for great tangy flavor.

Homemade Mini Waffles

These mini-sized waffles are the perfect base for any additions you want to add, sweet or savory. They make for a fun, customizable breakfast for a slow morning or the weekend.

  1. Measure out and mix together milk, Greek yogurt, vegetable oil and egg. Whisk together to combine completely. I usually do this in a glass liquid measuring cup.

  2. In a medium-sized bowl, measure and whisk together dry ingredients: flour, baking powder, baking soda, salt, and sugar. 

  3. Add the liquid mix to the dry ingredients, whisking to combine- but be careful not to overmix.

  4. Mix in additions of your choice to the batter, sweet or savory. Or, leave the batter plain.

  5. Preheat your mini waffle iron, and preheat the oven to 300 degrees. Once heated, spray with non-stick cooking spray or butter, and scoop 1/4 cup of batter into the iron.

  6. Place a wire rack onto a sheet tray, and keep it in the oven. As you cook each waffle, add it to the tray in the oven. This will keep them warm until serving, and can help crisp up the waffles after the initial cook!

  7. Serve with butter and warmed syrup, and enjoy!

Note

I use a mini waffle maker to make about 8 small-sized waffles with this recipe. With a regular-sized waffle iron, this recipe may make 4 waffles. For a larger batch, or for a larger waffle maker, double the recipe.

Some of my favorite savory additions are cheddar cheese, cooked bacon, and shredded potatoes. My favorite sweet additions are blueberries or chocolate chips. Split the batter to make half-savory, half-sweet!

Instead of Greek yogurt, use sour cream in place, or butter milk in place of the yogurt and milk.
