Greek-Spiced Sheet Pan Chicken with Yogurt Dressing Recipe

I rely on this recipe for busy weeknights or for those times where were craving something a little different. It takes about 15 minutes for the chicken to cook in the oven, during which gives enough time to mix up a Greek yogurt dressing. Soon, you’ve got great staples to turn into gyros, by wrapping in pitas, or into salads by topping upon your favorite mix of lettuces.

They might be my favorite thing about this recipe. These chickpeas add such a flavorful and complimentary crunch to this dish, and they’re great to snack on. Most times, it’s rare a batch of these make it two days in our house.

Marinate your chicken with Greek spices a few hours before cooking!

We want to impart flavor into every aspect of this meal, and for the chicken we bring it with a mix of spices and a few hours of chilling in the fridge. If you can, let this marinate overnight, but if you have only a few hours, that’s OK!

Included in the spice mix is za’atar seasoning- a Middle Eastern spice blend, usually a blend of oregano, thyme, marjoram, sesame seeds, and sumac. The blend brings nutty, savory notes to the chicken, and compliments well with the added garlic powder and smoked paprika. Additionally, to the marinade, I added brine from a jar of pepperoncini peppers to bring some acidic zing. If you don’t have this at home, use pickle brine or lemon juice to bring that punchy flavor.

Serve it up with the yogurt dressing!

I like to serve this chicken and dressing with a mix of chopped tomatoes, red onion, and cucumber that has been tossed in olive oil, salt, and tender herbs like parsley and mint. Plus, this topping adds more of that fresh crunch to your meal, bringing some brightness to the dish!

This recipe is perfect for a busy day or evening. Chicken thighs cook quickly in the oven, and during cooking time, it leaves you with enough time to mix up a Greek yogurt dressing, perfect for salads or wraps.

Instructions

For the chicken:

  1. Marinate the chicken:

    Combine spices and chicken together. Marinate for a few hours, overnight if possible, 

  2. Cook the chicken:

    Preheat oven to 425 degrees.

    Lay chicken thighs flat onto a sheet tray, making sure they do not touch.

    Roast for 15 minutes, flipping halfway. Cook until the chicken reaches an internal temperature of 165 degrees.

    Remove the chicken from oven, place on a cutting board, and let rest for a few minutes.

For the Greek yogurt dressing,

  1. Combine all ingredients and mix thoroughly

Add chicken and dressing to salads, pitas, or a grain bowl, and top with chopped tomatoes, red onions, olives and feta.

Add tender herbs to enhance your meal!
